Numbers 18:17-18 King James Version (KJV)
17 But the firstling of a cow, or the firstling of a sheep, or the firstling of a goat, thou shalt not redeem; they are holy: thou shalt sprinkle their blood upon the altar, and shalt burn their fat for an offering made by fire, for a sweet savour unto the Lord.
18 And the flesh of them shall be thine, as the wave breast and as the right shoulder are thine.

You shall sprinkle their blood on the altar, and shall burn their fat for an offering made by fire, for a pleasant aroma to Yahweh. 18 Their flesh shall be yours, as the wave offering breast and as the right thigh, it shall be yours.

17 Cows, sheep and goats were the most common for sacrifice they were not the only accepted forms though, we see how doves are accepted by the poor and how rams are offered and how clean birds are offered as well. With birds however the first born is not always the best as with cows and sheep and goats where the first born is the strongest and the last born is the runt of the litter. We are not to keep the best things to ourselves but give them to the Lord. What we give to the Lord is holy, whether these animals are given to the Lord or not they are holy because they belong to Him whether they were given or to Him or not. The fat was not to be eaten it symbolized sin and the sin was to be left. We are to leave our sins as the fat was left before the Lord.
18 We are to have the meat, this is the best part to eat and best for us, when we give to God He gives the best for us back to us. The whole animal was given to the Lord but the Lord gave back part to them.
